How to use fresh white truffles
Shave Tuber magnatum thinly over a warm finished dish immediately before serving. Classic pairings include buttered pasta, risotto, eggs, potatoes, polenta and mild cheese. Avoid prolonged cooking because heat quickly reduces the volatile aroma.
Storage
Keep refrigerated at 2–4°C (35–39°F), wrapped in clean, dry paper towel inside a sealed container. Replace the paper daily and clean the truffle only immediately before use. For the strongest aroma, use as soon as possible after delivery.
