In response to the requests of chefs and restaurants we serve, we have created preserved truffles with a sterilisation method named “appertisation”. This modern technique enables us to provide preserved truffles all year round.
A fresh black truffle has a limited shelf life of approximately 7 days, whereas a preserved black truffle in a jar can be kept for multiple years if it is not opened.
A distinctive, expert sterilisation process
Our Truffle Masters sort our fresh black truffles by size, shape, and other criteria for preservation. Afterwards, these truffles are placed in jars and sterilised through an autoclave. Thanks to this process, the exquisite flavour of the black truffle is kept intact, pleasing the palates of connoisseurs.
We have created two distinct methods to satisfy the requirements of our customers:
"First boil," which preserves the majority of the truffle's aroma through one cooking process, and is favored by chefs, gourmets, and other professionals; and
"Second boil," which is designed to bring out the truffle's flavor and texture, making it ideal for those who appreciate bolder tastes.
The "sure value" of our truffles is their unique flavour and texture preserved through double cooking. We also offer "extra" truffles with a beautiful, regular spherical shape for an aesthetic and flavourful experience, and "1st choice" truffles with a less regular shape but still with great aroma and flavour. All our truffles in jars are "brushed" cleaned before being preserved.

How to cook and enjoy preserved truffles?
Preserving the whole truffle maintains both its aesthetics and flavour, making it an excellent choice for sophisticated meals. Though its flavours may be slightly different from that of the fresh variety, the preserved truffle still has its own aromatic profile to add a special touch to your meal.
To draw out all of their flavours, appertised truffles should be gently heated and added to simple, neutral ingredients such as rice, pasta, or eggs. The temperature should not exceed 50°C, with the heat gradually increasing. To retain the most flavour, the preserved black truffle should be added at the end of the cooking process.
Using 10 to 15 grammes of truffle per person, or 10% of the total ingredients, is an essential factor in cooking with preserved truffle. It is not possible to grate the truffle as it has already been cooked, however, it can be chopped or added whole to dishes such as a pâté.

The climate is different for different EU countries in different seasons and the quality of truffles is variable. We manage to maintain excellent quality because we cover a very large area of Europe. We buy and sell extremely fresh truffles from truffle hunters from France, Italy, Spain, Romania, Turkey and Bulgaria
