The Brumale truffle (Tuber brumale Vitt.), also known as the black winter truffle, is harvested from November to mid-March. Characterised by small, flat, globular warts, it has a dark, almost black skin and can vary in size from 2 to 9 centimetres. Its pale, marbled flesh has clear-cut veins in two colours: white and grey.
Skilled truffle foragers are aware that Brumale truffles thrive in big deciduous woods or areas abundant with oak trees, from which it obtains nutrients and its unique aroma and colour. It is typically found between 5 and 30 cm beneath the ground, requiring specialised truffle-hunting dogs to detect its strong, distinct odour. This type of truffle prefers very chalky terrain, yet can also be located in other kinds of soil and on lower elevations than those needed for extensive forestation.
The black truffle, also known as the strong black truffle due to its powerful flavour and lingering aroma, is a cost-effective yet excellent addition to pasta and rice dishes, main courses, and salads. Its distinct taste reminiscent of turnip in some specimens is particularly popular with those who enjoy strong and bold flavours. The musky truffle (Tuber brumale var. moschatum De Ferry) is also a part of this species, and its aroma is described as being musky and woody. It is usually eaten raw in salads, adding a piquant touch.
