The black truffle has a summer variation, which is mild and delicately-flavored. Available from May through August, these mushrooms provide a great way to add a truffle flavor to summer and spring dishes at a more budget-friendly cost compared to the winter or fall types. In terms of shape and appearance, it looks the same as the other varieties, but is less aromatic. To enhance the flavor, thinly slice and warm with truffle butter or paste. Furthermore, this summer truffle is a lovely addition to give dishes a fresh truffle touch.
Cook with short cooking times and avoid high heat. Store in the refrigerator with a damp paper towel.
To quickly clean the truffle, rinse it in cold water and then, under running water, use a soft brush (or an old toothbrush) to remove any earth residues. Once the truffle is clean, it can be used in a variety of ways. For slicing raw, the truffle makes for a delicious addition to hot dishes that will enhance its flavour. As an alternative, grating the truffle can create an excellent oil-based sauce. To create this sauce, it is recommended to use garlic and extra virgin olive oil, to which the minced truffle is seasoned with salt and a pinch of pepper.
