Grades, pack sizes and professional ordering

Grades describe piece size, appearance and condition; they do not make different species interchangeable. Review the live variant name and product details before ordering. Fresh truffle storage and kitchen handling

Open the shipment promptly, inspect the truffles and follow the product or package directions. Keep fresh truffles refrigerated in a clean container with dry absorbent paper, replace damp paper, and use promptly while aroma and texture are at their best. Clean gently just before use rather than soaking. Shave or grate over warm, fat-rich foods such as butter, cream, eggs, cheese or olive oil to help carry the aroma.

Compare fresh, frozen and dried truffles

Fresh truffles are best when aroma, texture and tableside presentation matter. For cooked applications, production planning or use beyond the short fresh season, compare the frozen truffle collection and dried truffles and mushrooms.
