Fresh Black Winter Truffles
Fresh Tuber melanosporum, selected from current Southern Hemisphere winter harvests. Depending on weekly availability, your truffles may come from Australia or Chile. Prized for their deep, earthy aroma and fine interior marbling, these black winter truffles are suited to shaving, finishing, and cooking.
Australian and Chilean seasonal lots
Australian truffles and Chilean truffles extend the black winter truffle season into the Northern Hemisphere summer. We offer the best available current lot rather than promising a fixed country of origin. Contact us before ordering if you need confirmation of the active lot.
Flavor and chef applications
Tuber melanosporum has a deep earthy and musky aroma, with forest-floor and subtle cocoa-like notes. Gentle warmth helps release its aroma, making it useful in sauces, compound butter, soft scrambled eggs, pasta, risotto, potatoes, poultry, and meat dishes. It may also be shaved raw over warm food at the table. Avoid prolonged high heat and pair it with clean, fat-forward ingredients that allow the truffle to remain the focus.

First Class
Whole, larger truffles selected for presentation, tableside shaving, and occasions where appearance matters.

Trimmed or naturally irregular pieces suited to slicing, shaving, and everyday professional kitchen use.

Smaller whole truffles suited to shaving, portion-controlled service, infusions, and composed dishes.
Back of the House
Made for the kitchen rather than the display. This value-focused grade may include irregular shapes, natural surface marks, trimming, or broken pieces that fall outside presentation standards. It is fresh Tuber melanosporum from our current Australian or Chilean lot, selected for sauces, truffle butter, pasta, risotto, fillings, and restaurant preparation where culinary utility matters more than appearance.
Storage and wholesale ordering
Wrap each truffle in clean, dry paper towel and refrigerate in a covered container at 2–4°C (35–39°F). Replace the towel daily, inspect the truffles, and clean them only shortly before service. Fresh truffles are perishable and should be used promptly while their aroma is strongest.
