A softer expression of white truffle. Meet Silken White, our name for Tuber panzhihuanense: a Chinese white truffle that surprised us with its pleasant aroma and gentle character. After years of working with truffles, we still love finding something that makes us pause, taste again, and rethink what a white truffle can be.

Our tasting notes
Our first comparison was Bianchetto, Tuber borchii, but with a softer touch. In our tasting, Silken White was less forceful and more pleasant, without the sharp, solvent-like impression that can make a powerful truffle feel overwhelming. We did not perceive an acetone-like note.
It also brought to mind the subtlety of Hungarian honey truffle—specifically its gentle, rounded character, rather than its sweetness. Silken White did not have that honeyed sweetness. That combination of a lovely aroma and an understated character is why we chose the name.
For our palate, we prefer it to Bianchetto. If you enjoy exploring truffles but find some white truffles too assertive, this is a delicious discovery worth making. These are our impressions of the truffles we tasted; individual truffles and harvests can vary.
A Chinese white truffle with its own identity
Tuber panzhihuanense is documented in southwestern China, including Yunnan and Sichuan, and is associated with Yunnan pine, Pinus yunnanensis. That relationship describes where it grows; it does not mean it tastes of pine. We found no pronounced pine flavor in our tasting.
This is a distinct species from Tuber magnatum, the celebrated Italian white truffle. We selected it for its own appeal: pleasant, subtle, and a welcome new experience for a curious truffle lover.
How we suggest serving it
Start simply. Shave it over warm buttered pasta, soft eggs, or a mild potato dish just before serving. A quiet background gives you room to discover its aroma. These are our suggested starting points; explore the amount that suits your palate before pairing it with stronger ingredients.
