Black Truffle Recipes: How to Cook Fresh Tuber Melanosporum Properly

Black Perigord truffle is the one truffle you are supposed to cook with. White truffle dies in a hot pan. Summer truffle is too polite to survive much. Melanosporum gets better when you warm it in fat, and it will perfume a whole dish overnight if you let it sit next to the other ingredients. That changes how you plan. With white truffle you cook the dish and shave at the table. With black truffle, half the work happens the day before. Below are six dishes that use a 100g truffle across four or five days, from the ones that need the truffle at its freshest to the ones that make good use of the last scraps. Portion guide: 5 to 7 grams of melanosporum per person is enough, which is less than you would use of summer truffle because the aroma is several times stronger.

The Overnight Step That Changes Everything

The night your truffle arrives, decide what it is going to perfume while it sits in the fridge. Put it in a sealed glass container with four to six whole raw eggs, and the aroma passes straight through the shells. Or add a small jug of double cream in an open ramekin inside the same container, and you have truffle cream for a sauce the next day. Or bury it in a container with peeled raw potatoes. This costs no truffle at all. You still have the whole thing to shave afterwards. It is the single highest-return habit in truffle cooking and most home cooks skip it.

Day One: Black Truffle Scrambled Eggs

Use the eggs you perfumed overnight. For two people, beat four eggs with a good pinch of salt and no milk. Melt 25g butter in a nonstick pan on the lowest heat available. Add the eggs and stir slowly and continuously with a spatula, scraping the base. It should take six to eight minutes. If the curds set in two, the heat is too high - lift the pan and keep stirring off the flame. Pull the eggs while they are still loose and glossy. They keep cooking on the plate. Spoon onto hot buttered toast, shave 5 to 7 grams of truffle over each portion, finish with flaky salt. Egg fat and truffle bind unusually well, which is why this dish is the standard first test of any fresh truffle. If the eggs do not smell strongly, your truffle is weak, and you should tell your supplier.

Day One or Two: Tagliatelle With Black Truffle and Butter

For two: 180g fresh egg tagliatelle, 80g unsalted butter, 40g grated Parmigiano Reggiano, 14g truffle. Grate half the truffle finely, about 7g, and stir it into the softened butter an hour ahead. Leave it at room temperature so the fat absorbs the aroma. Cook the pasta in well-salted water for 90 seconds to two minutes. Meanwhile, melt the truffle butter in a wide pan over low heat with three tablespoons of pasta water, swirling until it emulsifies into a glossy sauce. Drain the pasta directly into the pan, add the Parmesan, and toss hard for thirty seconds. The sauce should coat every strand without pooling. Shave the remaining 7g of truffle over the plated pasta. You get cooked truffle from the butter and raw truffle on top, and the two aromas are noticeably different.

Why No Cream, No Garlic, No Mushrooms

Cream flattens the aroma. Garlic competes directly and usually wins. Mushrooms sound like a natural partner and in practice mostly muddy it. Melanosporum needs the rest of the plate to shut up.

Day Two: Black Truffle Risotto

For four: 320g carnaroli rice, one small shallot, 1.2 litres of simmering chicken stock, 100ml dry white wine, 80g butter, 60g Parmesan, 25 to 30g truffle. Sweat the shallot in half the butter for eight minutes without letting it colour. Add the rice and toast for two minutes until translucent at the edges. Add the wine and let it cook off. Add stock a ladle at a time, stirring, waiting for each to be absorbed before the next. Seventeen to eighteen minutes for carnaroli. Start tasting at fifteen. Off the heat, beat in the remaining butter and the Parmesan, cover for two minutes, then stir vigorously so the risotto flows on the plate. Shave truffle over each portion. If you have any truffle offcuts, grate them into the butter before you beat it in, so the aroma runs through the whole dish rather than sitting on top.

Day Two or Three: Truffle Mashed Potato and Roast Chicken

Truffle under chicken skin is a Perigord classic and works because slow, moderate heat pushes the aroma into the meat. Loosen the skin over the breasts of a 1.6kg chicken with your fingers. Slide in thin slices of truffle, roughly 8g each side, with a little soft butter. Season the bird well, put the truffle trimmings and a knob of butter in the cavity, and refrigerate uncovered overnight. That rest is not optional if you want the aroma in the meat rather than just on it. Roast at 200C for 55 to 65 minutes, basting twice, then rest 15 minutes. For the mash, use the potatoes you perfumed in the truffle container. Steam 800g of floury potatoes, pass them through a ricer, and beat in 120g butter and 100ml warm whole milk over low heat. Season firmly. Fold through 5g of finely grated truffle at the end, off the heat. Carve, shave a little fresh truffle over the meat, and serve. Cooked truffle in the bird, raw truffle on top, and a third layer in the potato.

Day Three: Sauce Perigueux for Steak

The classic French black truffle sauce, simplified for a domestic kitchen. Sear two thick steaks in a heavy pan, remove and rest them. Pour off the fat, add a finely chopped shallot and cook for two minutes. Deglaze with 60ml Madeira and reduce it to a syrup. Add 200ml good beef or veal stock and reduce by half. Whisk in 30g cold butter, one cube at a time, off the heat. Only now, with the pan away from the flame, stir in 8 to 10g of finely chopped truffle. Leave it for two minutes, taste, and add salt. Boiling truffle in a sauce drives off the aroma you paid for, so it goes in last and never returns to a hard heat. Spoon over the sliced steak. This is also the sauce to make with Cut Class melanosporum, since nothing here depends on appearance.

Day Four: Truffle Butter and Truffle Salt From the Leftovers

Grate every remaining piece, including trimmings, into softened unsalted butter at a ratio of about 15 to 20g truffle per 200g butter. Add half a teaspoon of fine salt, roll into a log in baking paper, and refrigerate. Slice into discs, freeze on a tray, then bag them. They hold their aroma for around three months. For truffle salt, dry very thin slices in an oven at its lowest setting with the door slightly ajar for two to three hours, until they snap. Blitz with coarse sea salt. It is not as good as fresh, but it is far better than anything sold in a jar, and it costs you only the scraps.

Mistakes That Waste Good Truffle

Adding truffle to a boiling sauce. Cooking it in acid, chilli or vinegar. Pairing it with strong cheese other than aged Parmesan. Serving it on cold plates, which flattens the smell. And storing it a week too long while waiting for a special occasion, which is the most common one of all.

Two Dishes for a Larger Truffle

Truffled Potato Gratin

Slice 900g of waxy potatoes thin. Infuse 250ml cream with 10g of grated truffle by warming it gently to just below a simmer and then leaving it off the heat for twenty minutes. Layer the potatoes in a buttered dish, seasoning between layers, pour over the infused cream, and bake at 170C for 50 to 55 minutes until a knife slides through without resistance and the top has coloured. Shave a few fresh grams over it as it comes out. A slow bake is one of the few long cooking processes melanosporum tolerates, because the temperature inside the dish never rises much above 100C and the cream traps what would otherwise escape.

Brie or Camembert Stuffed With Truffle

Cut a whole small Brie horizontally through the middle. Lay overlapping slices of truffle, about 10g, across the cut face, close it, wrap it tightly in cling film, and leave it in the refrigerator for two to three days. The fat in the cheese absorbs the aroma and spreads it through the paste. Serve at room temperature with plain bread and nothing else. This is a good use for a truffle that is on day four and starting to soften, and it is the single most reliable way we know to impress people who claim not to like truffle.

Wine With Black Truffle

The classic pairing is aged Nebbiolo, either Barolo or Barbaresco, with ten years or more on it, because tertiary aromas in mature Nebbiolo run in the same direction as truffle rather than against it. Aged Burgundy works for the same reason. So does a mature Rioja Gran Reserva, which is easier to find in good condition. Avoid young, tannic, heavily oaked reds and anything with obvious residual sugar. Both will bury the truffle completely, and the whole point of the dish disappears with it.

Which Grade to Buy for Each Dish

Extra and First Class for the pasta, the eggs and anything where slices are visible. Cut Class for the sauce, the mash, the butter and the chicken, since the interior is identical and only the exterior differs. Small Class if you want to cook with fresh black truffle regularly rather than in one large event. Questions We Get Asked in the Kitchen

How Long Can Truffle Sit in a Warm Sauce?

A few minutes, off the heat, is fine and even helpful. Anything held at a simmer for half an hour will taste of almost nothing by service. If you are cooking for a crowd, keep the truffle out and add it to each batch as it goes to the table.

Can I Use Black Truffle in a Vegetarian Dish?

It is one of the better ingredients for it. Celeriac puree, cauliflower roasted whole in butter, Jerusalem artichoke soup finished off the heat, and truffled polenta all work as well as any meat dish here. Keep the fat content up, because without it there is nothing to carry the aroma.

Do I Have to Use Fresh Egg Pasta?

It performs better than dried, because the egg fat binds truffle aroma and the softer surface holds butter. Dried pasta still works. What does not work is a shape with ridges designed for chunky sauces, since truffle butter needs a smooth strand to cling to.

Planning Your Week

Order for a delivery date, not for a date you happen to be free. Cook the eggs and the pasta in the first 48 hours while the aroma is at full strength. Push the chicken, the mash and the sauce to days three and four, when a slightly softer truffle still performs perfectly under heat. Finish with butter.
