How to Use White Truffles: Five Piedmontese Dishes and the Rules Behind Them

There is a reason the classic white truffle repertoire is so small. Tuber magnatum has one of the most powerful aromas in food and one of the most fragile. Heat destroys it in seconds, acid kills it, and any assertive ingredient on the plate simply overwrites it. So the Piedmontese solved the problem two centuries ago and then stopped. Butter, egg, cheese, starch, warmth. Nothing else. Every dish below is a variation on that idea, and the ones people invent to be original almost always taste worse. The season runs from October to late December, so this is the shortlist to plan around now, before the good truffles are allocated. The Rules, First

Never cook it. White truffle goes on the plate raw, after the food is served, and never into a pan. The compounds that make it worth having boil off almost immediately. Shave, do not chop. A truffle slicer with a sharp adjustable blade gives you translucent slices with maximum surface area. Thick slices waste truffle and taste of very little. Warm the plates and the food. Aroma needs gentle heat rising off the dish to carry it. A cold plate is the fastest way to lose half of what you paid for. Shave at the table. The smell that lifts when truffle meets hot pasta is a large part of the experience, and doing it in the kitchen throws that away. Count 5 to 7 grams per person. White truffle is far stronger than summer or black truffle, so a 30 gram truffle serves four people properly.

Tajarin With Butter and White Truffle

The definitive dish. Tajarin is the Piedmontese egg noodle made with a very high yolk ratio, traditionally 30 yolks to a kilo of flour, and it is the reason this pasta carries truffle better than any other. For four you need 400g fresh tajarin or the finest egg tagliolini you can buy, 120g good unsalted butter, 60g grated Parmigiano Reggiano, and 25 to 30g of white truffle. Warm four plates in a low oven. Bring a wide pan of salted water to a rolling boil. Melt the butter gently in a large frying pan with four tablespoons of the pasta water. Swirl it until it turns cloudy and creamy. Keep the heat low, because browned butter has its own strong smell and it will fight the truffle. Tajarin cooks in about 60 to 90 seconds. Lift it straight into the butter with tongs, add the Parmesan, and toss for twenty seconds until the sauce coats every strand. Divide between the hot plates and take them to the table. Shave the truffle over each one there, working from a height so the slices fall evenly. Serve immediately.

Why Not Cream or Garlic

Cream coats the palate and dulls the aroma. Garlic occupies the same aromatic space as white truffle and loses nothing in the fight. Both appear in restaurant "truffle pasta" mainly when the truffle is not real.

Risotto Bianco With White Truffle

Risotto works because it is warm, starchy and bland in the best way. Made properly it also holds heat for longer than pasta, which keeps the aroma rising through the whole plate. For four: 320g carnaroli rice, one small shallot finely chopped, 1.2 litres of light chicken stock at a simmer, 100ml dry white wine, 90g butter, 70g Parmigiano Reggiano, 25 to 30g truffle. Sweat the shallot in 40g of the butter over low heat for eight minutes without letting it take colour. Add the rice and toast for two minutes, until the grains look glassy at the edges. Add the wine and let it evaporate. Add stock one ladle at a time, stirring steadily, waiting until each addition is almost gone before adding the next. Carnaroli takes 17 to 18 minutes. Begin tasting at 15, and stop when the grain still has a slight resistance in the middle. Take the pan off the heat. Add the remaining 50g of cold butter and the Parmesan, cover for two minutes, then beat hard with a wooden spoon. The finished risotto should spread slowly across a warm plate rather than standing up in a heap. Plate, carry to the table, shave.

Fried Egg With White Truffle

The simplest way to serve white truffle well, and the one we cook when there are 8 grams left in the box on the fourth day. Fry one egg per person in butter over low heat until the white is just set and the yolk is completely liquid. Do not crisp the edges, since browned butter and crisp albumen bring their own flavours. Slide onto a warm plate, season with fine salt, and shave 5 to 6 grams over the top. The heat coming off the yolk carries the truffle straight up. For a slightly grander version, do the same over soft polenta finished with butter and Parmesan.

Perfume the Eggs First

Put the whole truffle in a sealed glass container with the raw eggs the night before. The aroma passes through the shell, and the eggs themselves smell of truffle before you shave a single gram. This costs nothing and works with any truffle species.

Fonduta With White Truffle

The Aosta and Piedmont cheese dish, and the traditional partner for magnatum long before pasta became the standard restaurant vehicle. Dice 300g of fontina and soak it in 200ml whole milk in the fridge for at least four hours, ideally overnight. Then melt it very gently in a bowl over simmering water, stirring, and whisk in three egg yolks and 30g butter. Keep the heat low and stop the moment it turns smooth and thick, because overheated fonduta splits. Spoon into warm shallow bowls, add a grinding of white pepper, and shave truffle over the top. Serve with grilled bread or soft polenta. Fontina is the one cheese that works under white truffle besides Parmesan. Its flavour is nutty and mild, and the fat carries the aroma without competing.

Veal Tartare With White Truffle

The Piedmontese eat this as carne cruda all'albese, and it is the only cold dish on the list that we think earns its truffle. Chop 400g of very fresh veal or lean beef by hand with a sharp knife, never in a machine. Dress it lightly with good olive oil, a little lemon juice, fine salt and pepper. Keep the dressing minimal, since the acid is there to season the meat and nothing more. Let it sit at room temperature for ten minutes before serving, because refrigerator-cold meat suppresses aroma. Shape into loose mounds on room-temperature plates, add shaved Parmigiano if you like, and shave the truffle on top. No capers, no mustard, no Worcestershire, no shallots. Every one of them will dominate the truffle.

Potato and White Truffle, Two Ways

Potato is the quiet partner that lets a small truffle stretch furthest, and it is underused outside Italy. For the simple version, steam small waxy potatoes until tender, crush them roughly with a fork, and dress them while hot with a serious amount of butter and fine salt. Serve warm, not hot, and shave truffle over the top. For the richer version, make a loose potato puree: 700g floury potatoes steamed and passed through a ricer, beaten with 150g butter and 120ml warm milk over low heat until it is almost pourable. Season firmly, spoon into warm bowls, and shave on top. Starch and butter hold the aroma in place for longer than pasta does, and a puree stays hot at the table, which keeps the smell rising while people eat.

Perfuming Ingredients Without Using Any Truffle

Anything porous stored with the truffle for a night will absorb its smell. Whole eggs in their shells are the best known. Raw peeled potatoes, arborio rice, a wrapped piece of fontina, and even a stick of butter in an open dish all work. Do this the night the truffle arrives and you effectively get two dishes out of one purchase, since the perfumed ingredient becomes the base of the meal and the truffle itself is still whole. The same trick works with fresh black truffle in the winter months.

How to Shave White Truffle Properly

Use a truffle slicer with an adjustable blade, set as thin as it will go. Clean the truffle first with a soft brush and the smallest possible amount of cold water, then dry it completely. Hold the truffle flat against the blade and use short, even strokes, rotating it so you take from the whole surface rather than cutting a flat face on one side. Shave over the centre of the plate from about twenty centimetres up so the slices land separately rather than in a pile. Do not shave in advance. Slices lose aroma within a couple of minutes of being cut, which is why it happens at the table and why a kitchen that shaves truffle before service is cutting a corner you will notice.

What Not to Do With White Truffle

Do not put it in sauce, soup, or anything that goes back on the heat. Do not roast it, fry it, or bake it under pastry. Do not pair it with tomato, chilli, vinegar, blue cheese, smoked fish or truffle oil, which is a synthetic product and will simply sit on top of the real thing. If a dish needs truffle that can take heat, use black Perigord truffle or summer truffle instead and keep the magnatum for the plate. And do not store it waiting for a better occasion. White truffle holds four to six days from delivery, wrapped in dry paper towel in a sealed glass jar at 2 to 4 degrees, with the paper changed daily. It declines faster than black truffle and it will not wait for your calendar.

Have a shaver ready and check the blade. Have the plates warming. What Wine Goes With White Truffle?

Aged Nebbiolo is the regional answer and it works, because mature Barolo and Barbaresco develop aromas that run alongside truffle rather than against it. A good Arneis or an older white Burgundy also holds up. Avoid young, tannic, heavily oaked wine of any colour.

How Many Courses Should the Truffle Appear In?

One. Two at most, and only if the second is a fried egg at the end. Palate fatigue is real with magnatum, and by the third exposure people stop noticing the thing they paid for.

Can I Serve White Truffle Over Meat or Fish?

Over plain roast veal or a mild white fish with butter, yes. Over anything grilled, charred, smoked or heavily seasoned, no. The rule is the same as always: if the dish has a strong flavour of its own, the truffle is decoration and you have wasted it.
