Fresh Tuber melanosporum harvested at an immature, early stage of development.

Important: These are early-season truffles with a light, delicate aroma. They are not yet fully mature and do not have the deep aromatic intensity of peak-season black winter truffles. Their interiors are naturally pale to creamy white rather than the dark, fully marbled interior associated with mature peak-season black winter truffles.

As the season develops: We expect later harvests to become progressively more mature toward the end of the year. Aroma and maturity vary by lot; ask us about each new arrival. This describes future harvests, not a promise that purchased truffles will mature in storage.

Format: sold only in a 1 kg (2.20 lb) pack. Smaller quantities are not available.

Natural size, shape, exterior color and maturity may vary from piece to piece. Keep refrigerated at 2–4°C (35–39°F) and use promptly after delivery.
