Grade #1 (Number One) — Closed Cap Matsutake. Every 1 lb, 5 lb Chef Pack and 30 lb Wholesale Case contains closed-cap matsutake only. Open-cap mushrooms are not included or substituted in this selection.

Fresh USA Northwest matsutake mushrooms are a prized seasonal wild mushroom harvested in the Pacific Northwest. Also known as American matsutake, Western matsutake and pine mushrooms, they are valued by chefs for their distinctive pine-forest aroma, warm spice notes, firm texture and clean, savory finish.

These fresh matsutake are available by the pound and in chef and wholesale formats for restaurants, specialty retailers and home cooks. Their unmistakable fragrance is best preserved with simple preparations: slice lengthwise and grill or lightly sear, steam in a clear broth, add to sukiyaki, or cook with rice for matsutake gohan.

How to use fresh matsutake

Matsutake pair especially well with rice, dashi, clear soups, seafood, poultry and restrained seasoning. Avoid heavy sauces that mask their fragrance. For grilling, cut lengthwise into thick slices and cook briefly over high heat. For matsutake rice or broth, add near the end of cooking to retain the aroma.

Storage and preparation

Refrigerate immediately after delivery. Keep the mushrooms dry and loosely wrapped in paper towel or breathable paper packaging. For the best aroma and texture, use promptly—ideally within two days of receipt. Clean only when ready to cook by gently brushing or wiping away forest debris; avoid soaking in water.

Seasonal chef and wholesale supply

Pacific Northwest matsutake are weather-dependent and available in limited seasonal lots. Truffle Cart supplies fresh matsutake mushrooms to chefs, restaurants, specialty retailers, distributors and home cooks nationwide. Contact our Trade Desk for recurring or volume requirements.

Because these are wild mushrooms, size, shape, color and natural surface markings vary from lot to lot. Product photography represents the character of the seasonal harvest rather than an exact mushroom count.
